Hi. I'm a vegetarian, and I am looking for ideas for packed lunches that I can take to work with me. Do you have any suggestions?
There is no need to be short of ideas because you are a vegetarian - there are lots of things to choose from that may even tempt non-vegetarians!
If you want to take sandwiches, vary the type of bread that you use, for example between plain wholemeal and granary, or be more adventurous with wholemeal pitta breads or wraps. You can fill these with low fat cheeses (such as cottage cheese, low fat cream cheese or edam), eggs, avocado, houmous, falafels (balls of ground seasoned chickpeas), different nut butters (there are loads apart from peanut butter ? cashew nut butter is particularly delicious) or roasted vegetables (just cook more the previous night with dinner). And while I know that nut butters are quite high in fat and calories, they do provide a source of protein - important for you as a veggie, and as long as you measure the portion and count it into your allowance, that's fine. You can add salad to all of these or take a separate side salad. If you don't have time for this, just cut yourself some chunky vegetable sticks and put them in a bag. They add some crunch and make a good substitute for crisps.
Other ideas include fresh, or homemade, soup or a slice of vegetable tortilla (cold omelette). When I'm busy, I often make extra dinner and eat it cold as lunch the next day!
Rice, couscous or pasta with salad, or roasted vegetables, sprinkled with seeds and nuts are other options. Or a mixed bean salad would be very nutritious and filling. You can spice up a rice salad with some curry powder if you want.
