Mixed Vegetable Rice
Serves: 2
Ingredients:
55g American long grain rice, easy cook
30g celery, raw
85g onions, raw
85g tomatoes, raw
30g green beans / French beans, boiled
55g peppers, green
45g carrots, raw
45g courgette
55g mushrooms, raw
30g sweetcorn (tinned or frozen)
5 garlic cloves
Method:
1. Put the rice and all the vegetables in a pan, cover with water and gently cook for about 15 minutes, until liquid has been absorbed.
2. Serve immediately while warm.
This is great for lunch with a fresh salad, or as a side with chicken and salad in the summer!
