Provencal Beef Stew
Serves: 6
Ingredients:
450g beef steak, lean
1 medium onion/90g Onions
300g mushroomsm
2 x garlic cloves
56g carrots
250g butter beans
1 x Oxo cube
400g can of chopped tomatoes
1 tsp oregano
Method:
1. Place beef in a slow cooker and add onion, mushrooms, garlic, carrots and half the butter beans.
2. Put the other half in a blender with 1/3 of the stock then puree.
4. Add the blended mixture to the slow cooker along with the remaining stock, tomatoes oregano, dried thyme, salt and pepper.
5. Cover and cook on a high setting of the slow cooker for approx 6 - 7 hours.
