I wondered if you can tell me the approximate nutritional value of a vegetable juice I have been making every morning since I bought a juicer. I usually juice: 2 carrots 2 sticks celery 1/4" cucumber piece of ginger small apple (to make it taste better) piece of pepper or any other salad veg that is handy. any other leafy veg to hand or piece of raw beetroot. Do I count the whole veg that I juice or is there another way?

Thanks for your query, and well done for starting the day in such a healthy way!
For the purposes of calorie content, I think you should, as you’ve suggested, work with the whole fruit. Though there will be some fibre and skin removed by your juicer, the amount of calories lost isn’t easily calculable and is likely to be small. To be on the “safe side” I therefore think it is better for you to work with the higher figure provided by the whole fruit.
Working with the ingredients you’ve provided, and assuming it makes two portions, then we’ve done the calculation for you and it works out as one serving providing 77 calories and 0.6g fat.
